FALL is here!!


My favorite time of year is fall! I love the cool weather, pumpkin patches, fall colors and lots of fall festivals! Halloween is my favorite holiday! I love seeing the creativity in the childrens costumes. My little one isn't big enough to decide what she wants to be so I get to pick...lol I live vicariously through them! Last year she was Arial and a ladybug. This year I'm thinking a cupcake.
My second fav is Thanksgiving. I love all the food my family makes. Aunt Debbie makes the BEST Sweet Potato Casserole. Uncle Clarence smokes a ham that could win a contest. Delish! I'm a vegetarian now but may have to change my mind just for Thanksgiving so I can eat that Ham!! We also play games and of course theres ALWAYS football on tv. When we were little my cousins and I would put a play on about Pilgrims and Indians every year. By the time we got it all together the adults were tipsy and didnt notice if we looked like idiots or not! Fun memories.

BLACK BEAN QUESADILLAS WITH CILANTRO LIME RICE
1 can rinsed black beans
1/2 cup of Cilantro tear into pieces
1 small red onion chopped
1 bag shredded cheese (I used Mexican)
Whole wheat tortillas
Saute red onion then add beans and cilantro heat till warm. Coat skillet with cooking spray. Place tortilla in pan. Spread bean mixture but not to close to edges of tortilla. Top with cheese and another tortilla. Brown bottom tortilla then flip very carefully! Once its brown and cheese is melted remove from heat. Cut in 4 triangles.
CILANTRO LIME RICE
Cook rice following directions. (I used my Pampered Chef Rice Cooker)
Add cilantro (1/2 cup torn) and juice of 1 lime. I scooped some pulp out. Mix together well.
Serve both with tomato and slices of avacodo. ENJOY!
