I don't know the official name of this stew or if it even has one. My ex mother in law (wow that's confusing) used to make this when she came to visit. I just got the recipe from her the other day. It has a sweet but tangy taste. I eat mine served over rice but it is really a stew. Make it a day ahead of time so much better the next day! You will need a pressure cooker and a large skillet. Sorry, I don't know exact measurements for the ingredients. But the recipes with a little of this and a splash of that make the best meals! Don't they?
Ingredients
Cauliflower
Turmeric
Extra Virgin Olive Oil (EVOO)
Beef stew pieces ( I bought a sirloin and cut it into pieces)
lemon juice
large can of tomato sauce
oregano
salt and pepper (S&P)
onion
First brown your beef, S&P, and onion in the pressure cooker (lid off). In the large skillet, heat your EVOO. Cut cauliflower into chunks do not cut in little pieces. Brown the cauliflower in the lg skillet on med heat. Keep flipping to prevent burning. Sprinkle enough turmeric to cover the pieces of cauliflower, about a tablespoon. Then pour some lemon juice over cauliflower probably about 1/4 cup. Use more if you want it real tangy. When beef is brown sprinkle on about a teaspoon of turmeric and about 1 tablespoon of oregano. Pour tomato paste in cooker. Fill tomato can with water and pour into cooker. Cover with lid and pressure cook it for about 25 min. When cauliflower is brown and soft, almost squishy, remove and place on paper towel lined plate to drain off oil. After cooker is done allow to cool, remove lid and add cauliflower. You can boil this if cauliflower is not as soft as you would like.
